Easy Microwave Eggplant Hummus
I`m a huge fan of hummus with flavors so strong that make me travel to the other side of this wide world.
The classical Baba ganoush (eggplant hummus) is made of roasted eggplant and includes tahini -a paste made from ground sesame seeds-. The problem is that tahini is sometimes hard to find in local supermarkets.
That’s why I wanted to make an easy microwave version without tahini that will get you out of troubles when unexpected guests come to your home.
Here is what you’ll need:
An easy twist of the classical Baba Ganoush. You will only need a few ingredients, a microwave and a blender.
- 4 tablespoons of olive oil preferably extra virgin
- The juice of 2 limes
- 1 teaspoon of Indian condiment mix. mustard, ginger, cumin, curcuma nutmeg and jamaican pepper
- Black pepper and salt
- 2 medium eggplants
- 4 garlic cloves chopped.
Wash well the eggplants and with the tip of a sharp knife make small incisions across the eggplant. This will help the microwave cooking.
Put the eggplants in the microwave for 20 minutes in the highest temperature.
Take the eggplants out of the microwave and wait a few minutes before opening them. Now with a spoon take the the tender inside of the eggplants.
Mix all the ingredients in the blender except the paprika. Now serve in a bowl and garnish with some paprika on top.
As you can see, this recipe is extremely easy and tasty. Remember that you can add more of each ingredient if you like. Keep tasting constantly and find the perfect point for your palate.
