I must say that this recipe is a big culinary revelation for me. It is acid and salty and you get a lot of garlic notes.

  • 5-6 chicken drumstick
  • cup soy sauce
  • 4 tbsp white wine vinegar or Filipino vinegar
  • 1 onion cut into slices
  • 4 garlic cloves crushed
  • 1 tsp peppercorn
  • 2 bay leafs
  1. In a big bowl add all the ingredients and let them marinate for 30 minutes or more.
  2. Heat a big pan (preferably a cast iron pan) and sear the chicken drumsticks. Sear every side for about 10 minutes until you get a golden result.
  3. Pour the marinade (with the onion and the crushed garlic cloves) and lower the heat. Cover with a lid and cook for 20 minutes until the chicken is fully cooked and tender. Remove the bay leaf.
  4. Serve along with a white rice bowl.
