Fried eggplant is one of the easiest Mediterranean side dishes that you can find. Also, it’s the base for eggplant parmigiana. Today I will show you how to make both.

Fried eggplants:
  • 2 medium size eggplants
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 tsp salt
  • Pinch of pepper
  • Vegetable oil to fry
Eggplant parmigiana bites
  • ¼ cup grated parmigiano reggiano cheese
  • ¼ cup grated mozzarella
  • ¼ cup Bolognese sauce
  1. Cut the eggplants into slices of about 1 inch thick. Season with salt and pepper.
  2. Beat the egg and dip each eggplant slice. Then cover with flour.
  3. In a medium size pan, add enough oil to cover the eggplant slices. Heat the pan over medium heat and when the oil is hot, fry the eggplants. Fry each eggplant for about 5 minutes per side until the eggplants are golden and crispy. Remove from the oil and take them to a plate with paper towels to absorb the excess oil.
Eggplant parmigiana bites:
  1. Place the fried eggplants in a baking tray. Add 1 tbsp of bolognese sauce to the top of each fried eggplant. Top with mozzarella cheese and Parmigiano Reggiano cheese.
  2. Take to the oven for 10 minutes at 180ºC (350ºF) in broil mode.
