As a banana bread lover, I can’t avoid falling in love with these protein banana bread muffins. They are a fluffier and healthier version of the classic banana bread.

  • 2 ripe bananas
  • 2 egg whites
  • ¾ cup whole wheat flour
  • 1 tsp baking powder
  • 1 scoop vanilla whey protein
  • 3 tbsp honey
  • 1 tbsp cinnamon
  • 1 tbsp peanut butter
  • 2 tbsp coconut oil
  1. Preheat the oven to 180ºC (350ºF)
  2. In a big bowl, mash the bananas.
  3. Add the egg whites, the cinnamon, the coconut oil, the peanut butter, and the honey. Mix well until you get a homogeneous batter.
  4. In another bowl mix the flour, the baking powder, and the whey protein.
  5. Slowly add the dry ingredients into the wet ingredients’ bowl. Mix well.
  6. Pour the batter into a muffins pan. I like to use silicone muffin cups that make the process of unmolding way easier.
  7. Bake for 10 - 15 minutes until the muffins are slightly brown.
