Chori-Pollo is one of the easiest taco fillings that you can find. It also works as an ethnic main dish if served with rice and avocado. Only 20 minutes and done!

  • 2 boneless chicken breasts
  • 3 Mexican chorizos
  • ½ cup shredded cheddar
  • 1 onion diced
  • 3 garlic cloves
  • 1 tsp dry oregano
  • 1 tsp cumin
  • ½ tbsp paprika
  • 1 tbsp olive oil
  • Salt and pepper
  1. Butterfly the chicken breasts and pound it to get a tender chicken. Season with salt, pepper, and oregano.
  2. Heat a pan over medium heat and add the olive oil. Cook the chicken for 3-5 minutes per side until it’s golden and fully cooked. Remove it from the pan and let it rest.
  3. In the meantime, add the diced onion and the minced garlic to the same pan and cook for a couple of minutes.
  4. Remove the skin from the chorizos and cut them into rough dices. Toss them into a food processor and pulse the chorizo until it’s ground.
  5. Add the ground chorizo to the pan. Season with cumin and paprika. Adjust salt if needed.
  6. Cut the chicken to bite size pieces. Add it to the pan and stir until everything is mixed. Sprinkle with the cheddar and serve.
