  • 3 vienna sausages
  • 1 onion
  • 1 bell pepper
  • 2 garlic cloves
  • 1 bay leaf
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 ½ cup of rice
  • 1 cups vegetable broth
  • 1 cup of water
  • salt to taste
  1. Cut the onion and bell pepper into tiny cubes. Mince the garlic
  2. In a big pan, heat the olive oil over medium heat. Toss the garlic, bell pepper, onion, and bay leaf into the pan and sautee for a minute.
  3. Add the sausages cut into rounds and the tomato paste. Stir and cook for a couple of minutes.
  4. Add the rice, vegetable broth, and water. Season with salt to taste and bring to a boil. Once the water starts boiling, lower the heat to a minimum, cover with a lid and let it cook for 12 - 15 minutes until the rice is done.
