Honduran Baleadas

Baleadas are one of the most iconic Honduran street foods. They are full of flavor, easy to make, and highly customizable.

Ingredients
  • 4 flour tortillas (I use 10 inches tortillas)
  • 350 gr cooked red beans
  • 4 eggs
  • 1 small onion
  • 2 garlic cloves
  • 2 tbsp vegetable oil
  • 1 avocado
  • 1 cup shredded queso fresco (South American white cheese)
  • salt and pepper to taste
Instructions
  1. Heat a pan over medium heat and add the vegetable oil.
  2. Dice the onion and mince the garlic. Toss it into the pan and cook for a couple of minutes until the onion is slightly transparent.
  3. Add the red beans, salt, and pepper to taste and cook for about 5 minutes. Blend this mixture to create a red bean paste.
  4. Beat the eggs and season with salt and pepper. Cook in a non-stick pan to get fluffy scrambled eggs.
  5. Warm up the tortillas. Spread 2-3 tbsp of red bean paste. Cover with shredded cheese, scrambled egg (about 1 egg per baleada), and avocado.
