- 1 cup coconut milk
- 1 banana
- ⅓ cup self-raising flour
- 2 tbsp sweetener (I use stevia)
- 1 egg
Pour all the ingredients into the blender and blend in high speed until you get a homogeneous batter.
Make your pancakes in a nonstick pan (you can add a bit of coconut oil if needed)
Serve with some fruit and honey.
