- 4 flour tortillas (I use 10 inches tortillas)
- 350 gr cooked red beans
- 4 eggs
- 1 small onion
- 2 garlic cloves
- 2 tbsp vegetable oil
- 1 avocado
- 1 cup shredded queso fresco (South American white cheese)
- salt and pepper to taste
Heat a pan over medium heat and add the vegetable oil.
Dice the onion and mince the garlic. Toss it into the pan and cook for a couple of minutes until the onion is slightly transparent.
Add the red beans, salt, and pepper to taste and cook for about 5 minutes. Blend this mixture to create a red bean paste.
Beat the eggs and season with salt and pepper. Cook in a non-stick pan to get fluffy scrambled eggs.
Warm up the tortillas. Spread 2-3 tbsp of red bean paste. Cover with shredded cheese, scrambled egg (about 1 egg per baleada), and avocado.
