Pumpkin Cake (Venezuelan Torta de Auyama)

Ingredients

  • 1 kg pumpkin (about 4 cups cooked mashed pumpkin)
  • 3 egg
  • 2 cups flour (+ 1 tbsp)
  • 1/4 cup sugar
  • 1 can condensed milk (400gr)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 2 tbsp unsalted butter
  • ¼ cup raisins

Instructions

  • Preheat the oven to 180ºC (350ºF)
  • Cut the pumkin into cubes. Boil them until they are soft and you can remove the peel easily. Let it cool.
  • Smash the cooked pumpkin and mix with the condensed milk.
  • Add the eggs, sugar, salt, melted butter and cinnamon, and mix well.
  • Slowly add the flour with the baking powder
  • Cover the raisins with a little bit of flour and add them to the dough.
  • Pour the mix into a buttered cake pan and take to the oven for 40 minutes.
