Preheat the oven to 180ºC (370ºF)
In a big pan over medium heat, cook the peaches (previously drained) for a couple minutes.
Add the sugar, the honey, the nutmeg, the cinnamon, the lime juice and cook for a couple minutes until the peaches start to caramelize a bit. Then add the butter and cook for 5 minutes.
Prepare a small baking tray, lightly greasing it with butter. Place 1 layer of puff pastry (from 1 package I can make two layers) and take it to the oven for 10 minutes.
Place a layer of the peach filling and cover with another layer of puff pastry. Take it to the oven for 10 minutes.
Repeat these steps until you have 4 layers of puff pastry (note 1) . Egg Wash the last layer and sprinkle with cinnamon. Take it to the oven for 10 minutes until the surface is golden.
