The Easiest Peach Strudel

Layers of crispy puff pastry and a spiced peach filling.  This is the easiest peach strudel that you are going to find.

 

This is one of those recipes that it was almost a flop but in the end, it turned out really delicious.

My first intention was to make a peach cobbler in an easy way using some ready-made pie crust. The only little problem is that I bought puff pastry by mistake. Yeaap, clumsy me. The worst is that I noticed it until I had my peach filling ready. I really need some glasses to make my grocery shopping.

So you know “when life gives you lemons…”. Only in this case life was giving two packed of puff pastry and a pan of delicious peach filling that I couldn’t waste.

 

 

That day I got this kind of strudel that has cobbler soul. It was super delicious. In my house we ate it almost completely in the day I made it. That’s what I consider a success.

So, I decided to put this recipe here on the blog. It is an easy dessert that can save you hours in the kitchen and that it has a lot of personality to be the star of a family dinner.

 

 

The filling is spiced with cinnamon and nutmeg for a punch of flavor. Also, I use honey and a little bit of sugar to sweeten it, but you can easily only use honey or agave to taste. The point is not to make this peach strudel oversweet. The splash of lime juice will help to balance all those flavors into a harmonious and complete dessert.

The Easiest Peach Strudel

Ingredients
  

  • 900 gr canned peaches 2 medium cans
  • 2 packages of puff pastry
  • 2 tbsp granulated sugar
  • 1 tbsp honey
  • 1 tsp nutmeg
  • ½ tbsp cinnamon a little bit more to sprinkle
  • 2 tbsp lime juice
  • 2 tbsp unsalted butter
  • 1 egg

Instructions
 

  • Preheat the oven to 180ºC (370ºF)
  • In a big pan over medium heat, cook the peaches (previously drained) for a couple minutes.
  • Add the sugar, the honey, the nutmeg, the cinnamon, the lime juice and cook for a couple minutes until the peaches start to caramelize a bit. Then add the butter and cook for 5 minutes.
  • Prepare a small baking tray, lightly greasing it with butter. Place 1 layer of puff pastry (from 1 package I can make two layers) and take it to the oven for 10 minutes.
  • Place a layer of the peach filling and cover with another layer of puff pastry. Take it to the oven for 10 minutes.
  • Repeat these steps until you have 4 layers of puff pastry (note 1) . Egg Wash the last layer and sprinkle with cinnamon. Take it to the oven for 10 minutes until the surface is golden.

Notes

  1. Each layer must be cooked for 10 minutes. 40 minutes in the oven is the total for the 4 layers.
