This easy cucumber salad will just take you less than 5 minutes to make. It’s super refreshing and the perfect side dish for the upcoming summer days.
In the summertime, there is no time to waste hours in the kitchen. In this time of the year, I’m all about easy and quick meals that allow me to spend more time outdoors and enjoy the weather.
This quick cucumber salad recipe is super basic but not less delicious. Onion and cucumber give a nice texture and crunch.
The dressing is the always reliable olive oil and apple cider vinegar combination that has that acidity punch that elevates the soft and fresh taste of the cucumbers.
The small changes are what make a simple recipe something else. It’s pretty common to use a bit of chopped dill in a cucumber salad. But, my mom used to add cilantro — because Latina moms can’t hold themselves around cilantro — and it worked like a charm.
For me, dill is an acquired taste, I must confess that in my trip to Egypt I couldn’t tolerate the cucumber salad because of the amount of dill in it. Shame.
So, if you are like me, cilantro/coriander or parsley may be the solution for your salads.

Should I peel the cucumbers?
In my case, I choose to peel the cucumber, but in most cases, you can leave the peel — usually, there are a ton of nutrients in the peel.
There are some cases where it’s better to take the peel off:
- Some cucumber varieties have a slightly bitter peel.
- When you use non-organic cucumbers, the skin can have some degree of pesticides in it. A lot of chemical pesticides don’t go completely away when you wash your vegetables.
- You have a problem digesting cucumber skin — like myself.

- 1 big cucumber
- 1 medium size onion sliced
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 handful of fresh coriander (cilantrchopped

Slice the cucumber into ½ inch thick slices. You can optional peel the cucumber before slicing it.

in a bowl, mix the sliced cucumber, sliced onion, olive oil, vinegar, coriander, and salt. Mix until the cucumbers are well coated with the dressing. Serve.
