What is a good party without good dips? Is it just me or do you also evaluate a party/social meeting according to the food? This bacon and corn dip is my trick inside my sleeve for game days, birthday parties and even as a simple afternoon snack.
Well, I will give you the secret for a party winner dip that you can put together in 10 minutes. Easy and delicious!
This is another of my family recipes. My aunties and mom are experts in creating dips for every occasion. The majority of my mom’s dips are easy and super tasty, like the microwave eggplant hummus that couldn’t be easier. Then all the guesses are always asking for our catering company.
This dip is super rich. It has a lot of bacon flavor that goes really well with the sweetness of the corn. And to finish the strong combination of flavors, the spring onions give the balance to make this dip a harmonious symphony of flavors and textures.
Every time I’ve made a batch of this bacon and corn dip, my boyfriend ends up eating a whole package of crackers or nachos and then he’s too full to eat dinner. So I guess that’s the only downside of this dip. Too good to last in the fridge.

How to make bacon corn dip?
My favorite part of this recipe is HOW EASY IT IS. Like insanely fast: 10 minutes!
The only dip that is easier in my 20 secs leek dip. But still, this is a chunky filling dip that you can make minutes before your guest arrives.
The first thing is to get crispy bacon. I cut my bacon into small squares and I cook it in the stove until starts to get crispy.
Then I add the spring onions and the sweet corn, I cook for a minute to let the flavors combine.
Finally, I turn off the stove and I add cream cheese and mayo. The remaining heat will soften the cream cheese and this fragrant and creamy dip is ready to serve.
I don’t know why, but I like to eat it warm. The cream cheese is extra soft and delicious. Especially If you use some bread… HEAVENLY.
