Breakfast is my favorite meal of the day. If I have a good breakfast I feel like my day is going to be brighter. And what is the ultimate breakfast food? Bacon. You know it was going to be bacon, what else could it be? — sorry pancakes, I love you too.

This, more than a recipe is a good tip to give a different touch to our everyday eggs and bacon.

How to get a strip of perfect brown sugar bacon?

The oven must be HOT. The temperature setting has to be 200ºC (400ºF) to get a nice and crispy exterior.

The timing is also important. It will depend on the finish you are looking for. If you desire a chewier result 5-8 minutes is enough but if you are like me and you want a big crunch the cooking time must be 10-12 minutes. Just check every now and then the bacon to make sure you get the result you want.

My personal touch, besides the two main ingredients — bacon and brown sugar, duh! —- is a pinch of cinnamon that gives that earthy fragrance to the caramelized bacon. This takes this bacon to another level of yumminess.

Another trick is to use foil underneath the bacon to get a maximum crispness and it will make the cleaning a lot easier.

I hope you enjoy this recipe and I see you in the next one!
