There are recipes that have the only purpose of warming your heart. This extra creamy cauliflower cheese soup does exactly that.
It’s a comforting soup with a delicate and velvety texture. The flavor is soft and with a pinch of spiciness (thanks, black pepper).
You don’t need tons of exuberant ingredients and flavor to get a good meal. I love how subtle this soup is.
Sometimes your spirit only wants some calmness. You know, looking through the window in a really cold day while your cat is purring on your lap.
For that kind of days, this soup is a gift from heaven.
First, it is really easy to make. You only have to cook the cauliflowers with the onion and the garlic in a big pan. Then, make a classic white sauce — butter, flour, milk— and finally simmer with broth, and you got the cream. Top with cheese and feel the winter vibes.
I don’t know who created the myth that you need to be cooking for 2 hours and using 20+ ingredients to make something tasty. Simplicity sometimes wins. Do not overcomplicate cooking. Cooking must be fun and relaxing, not a marathon to see who can cook the hardest recipe.
This recipe is a classic. You can garnish with a lot of things:
- Butter croutons (just toss the croutons over 1 tbsp of butter and let them crispy)
- Butter sage (the same principle than above)
- Spicy chickpeas ( roast some chickpeas seasoned with turmeric and chili powder)
- Fresh parsley.
- CHEESE, my favorite option for this soup. Strings and strings of coziness.
- Crispy bacon, just because.
The thing is that this soup is super versatile and you can add texture if you want.

Cauliflower cheese soup
Ingredients
- 1 cauliflower head
- 1 onion diced
- 3 garlic cloves thinly chopped
- 4 tbsp salted butter divided
- 3 tbsp all purpose flour
- 1 cup milk
- ½ cup grated mozzarella cheese
- 3 cup chicken broth
- 3 cup water
- Salt
- Black pepper
Instructions
- In a big pot over medium heat, melt half of the butter and saute the onions and the garlic. When softened, add the cauliflower head chopped into tiny pieces.
- Pour the broth and the water and simmer until the cauliflower is tender.
- In a small saucepan, melt the rest of the butter. Add the flour and the milk and slowly mix until a thick white sauce is formed.
- Pour the white sauce over the cauliflower soup and mix well. Blend until it’s smooth.
- Simmer the creamy cauliflower soup for 5 more minutes while stirring. Add the cheese (optional) and season with salt and black pepper.
