This overnight breakfast strata is a lazy morning miracle. Also, it’s the perfect crowd pleaser for a Christmas morning or a family brunch.
Sometimes I just want to be lazy. I mean, no thinking what I have to prepare for breakfast. I just wish my breakfast “appears” in my plate. I know it sounds too good to be true but this dish is exactly that.
You can toss all the ingredients in a baking pan and let it sit overnight. Then when you wake up you just put the strata into the oven for 35 minutes and you get a delish breakfast that everybody will love.
I like to pour a big cup of café con leche and a square piece of this strata to get a great morning.
The good thing about this breakfast strata is that you can basically add every leftover you have in your fridge and it will be yummy. Chorizo, chicken, ground meat, turkey, spinach, swiss cheese, cheddar, mozzarella, etc. This is an all-you-have-in-your-fridge kind of dish and you know I love this kind of recipes. If you hate wasting food this dish is a good recycling method for busy mornings.

How do you assemble a Strata?
Easy peasy
First, in a deep baking pan place your bread — cut into cubes.
Then toss all the yummy stuff you want to add: bacon, cheese, meat, greens, etc.
Then pour a mix of egg and milk and Voilá! you have a Strata.
You can let it sit overnight and bake it when you wake up. This will become a spongy and delicious Strata. Let it cool for a couple minutes and it will compact and deflate a little bit.
If you have leftover strata there is no problem. You can take it to the fridge up to 3 days after baking it. This is such an easy and no fuss dish.

- 6 slices of loaf bread cut into 1-inch cubes
- 6 medium eggs
- 1 cup whole milk
- 1 cup mozzarella cheese
- 1 cup cheddar cheese
- 100 gr bacon
- 50 gr chorizo
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp mustard
- Salt and Pepper

In a small non-stick pan cook the bacon and the chorizo --- both cut into small pieces. Cook over low heat because it will allow the bacon to release the grease and get crispy evenly.

In a bowl beat the eggs. Pour the milk and season with onion powder, garlic powder, paprika, mustard, pepper, and salt.

In a deep big baking pan place the bread. Top with the chorizo, bacon, mozzarella, and cheddar.

Pour the egg mix and let it sit in the fridge overnight ( if you want to prepare it the same day let it sit at least 2 hours.

Preheat the oven to 180ºC (350ºF) for 5 minutes. Bake the strata for 25 minutes.

Let it sit for a couple minutes and serve.
