These oven-baked garlic parmesan wings are a must in my house while binging on Netflix series. They have crispy skin and a buttery sauce.
How to make crispy wings in the oven?
I usually avoid eating fried food too often in my week because I like to keep things health-ish at home. Also, I would like to fit in my new bathing suit for this summer.
But with chicken wings there is always that little problem when making it in the oven: if you don’t make them properly, they turn out soggy. There is nothing more unappealing than a soggy chicken wing.
Of course, my first attempts of oven baked chicken wings were a complete disaster. But after a large number of disappointments, I found out the ultimate method.
So, as usual, I decided that I had to find a method that worked for me and share it here in my little corner of the internet, and here we are.
The first thing is to coat the seasoned chicken wings with flour. They must be completely coated but make sure there are no accumulations of flour in some spots. We want a thin and evenly coat of flour that gives crispy skin.
Then another factor that we must master to get crispy oven baked wings is the temperature. The oven must be hot. This means to preheat the oven to 220ºC (430ºF) and bake the chicken wings for 20 – 25 minutes per side (a total of 40 – 50 min total).
Another tip is to use a baking rack over a baking tray to collect the grease and it will give you an even result. With parchment paper, the wings sit in their own grease and the side that is touching the paper ends up with a softer finish because it’s sodden in oil
How to get the garlic parmesan sauce?
This is where this recipe shines. The sauce is beyond easy and it will add that shiny cheesy finish to the wings.
The ingredients for the sauce:
- 3 tbsp butter
- 6 garlic cloves
- ½ cup grated parmesan cheese
The first step is to melt the butter over low heat — we don’t want brown butter so be gentle with the heat.
Then we mince the garlic — you can use garlic paste too —- and we add it to the butter and stir for 1 minute until it becomes fragrant.
Finally, add the grated parmesan cheese and we take the pan out of the stove. The cheese will melt with the residual heat from the pan. This way we make sure to not burn the cheese.
The last step is to dip the wings in the sauce and make sure that each wing is coated with cheese and garlic pieces. Then let them dry for a couple of minutes and serve with your favorite dipping sauce.
Garlic Parmesan Wings (Oven Baked)
Ingredients
- 10-15 chicken wings
- 1 cup flour
- 1 tbsp dried thyme
- 1 tbsp salt
- 1 tbsp black pepper
- 6 garlic cloves
- ½ cup grated parmesan cheese
- 3 tbsp butter
Instructions
- Preheat the oven to 220ºC (430ºF)
- In a Ziploc bag add the flour, the thyme, the salt, and black pepper. Mix it well.
- Place the chicken wings in batches in the Ziploc bag and shake it to coat the wings with flour.
- Place the chicken wings over a baking rack — at the bottom place a baking rack to collect the grease and not make a mess in your oven. Bake for 20-25 minutes per side (40-45 min total).
- In a pan over low heat melt the butter. Add the garlic cloves minced and cook for 1 minute until fragrant. Then turn the stove off and add the cheese and let it melt with the residual heat.
- Cover each wing with the sauce and let them dry in the rack. Serve with your favorite dipping sauce.
