My mom loved to take this recipe to our outdoor trips. I can remember the taste of this macaroni salad in my beach days. This is the most retro salad recipe that I know.
For me, this salad is perfect for a picnic on a sunny summer day. It is super easy to assemble, it requires almost no prep time and it is a complete meal by itself.
The only important thing is that this salad needs some refrigeration because the mayo dressing tends to spoil quite quickly. In these cases, my mom uses to take the dressing apart and then adding it just before serving the salad.
The other great thing is that you can add almost every ingredient that you want. In this post, I will teach you the basic macaroni salad but you can get creative and add some tuna or boiled eggs if you want more protein.
How you make macaroni salad?
A few basic ingredients: cooked macaroni pasta, mayo, diced onions, mustard, and peas. Those are the basic but as I said before “the sky’s the limit” with this recipe.
This recipe will take you less than 5 minutes to assemble because the main instruction is: mix all the ingredients in a bowl. Yeap, that easy!

Macaroni Salad
Ingredients
- 2 cup macaroni
- ½ onion cut into dices
- ½ small sweet bell pepper cut into dices
- ¼ cup sweet corn
- ¼ cup peas
- ¼ cup mayo
- 1 tsp mustard
- Salt and pepper to taste
Instructions
- Cook the macaroni according to their package instruction. Let it cool completely.
- In a big bowl mix all the ingredients and mix well to coat all the salad with the dressing.
