I’m always trying new combinations that makes me feel good with my body without sacrificing the flavor in my meals. What a better option for this purpose than doing this Salmon with kale and mushrooms that is super delicious and only 300 calories per portion.
As you may know “Kale” is the trendy vegetable. The Kale is considered one of the “superfood” because of its high levels of vitamin K, A and C.
As a dressing i used a Greek yogurt base with lemon and a lot of pepper. The result is a creamy but light dressing that goes so well with the Salmon.
Now, let’s see this recipe that will nourish your body and give you a boost of energy.

Healthy salmon with kale and mushrooms
Ingredients
- 400 gr of salmon two pieces
- 150 gr of Kale
- 150 gr of white small mushrooms chopped.
- 3 garlic cloves chopped
- Kosher salt
- White pepper
- Garlic powder
- ½ lime
- Olive oil
For the yogurt cream:
- 2 tbsp of unsweetened greek yogurt
- ½ lime
- Dijon mustard
- Black pepper
- Garlic powder
- Salt
Instructions
- First prepare the creamy yogurt sauce. In a bowl mix all the ingredients and reserve the sauce in the fridge until serve.
- Marinate the salmon with the ½ lime juice, garlic powder, white pepper and kosher salt.
- Now in a big flat pan over medium heat pour a little bit of olive oil. When the oil is hot add the garlic and stir.
- Incorporate the mushrooms (previously washed and chopped). Stir until the mushrooms tender.
- Add the kale chopped and wait until is soft.
- In the pan’s center make a space to place the salmon fillet with the skin facing down. When the skin of the salmon is crispy, flip the filet and cook for another 5 minutes and it will be ready to serve with some yogurt cream on top.
