This sauteed mushrooms and onions are the easiest side dish that you will ever get. This recipe only requires a special mix of herbs and spices to get a buttery dish that everybody will love.
This is the type of recipe that I’m all in for: easy, full of flavor and quick. We don’t have all the time of the world to spend uncountable hours in front of a stove. You know I would rather spend my hour watching something on Netflix — like Outlander, which is A-MA-ZING, please don’t spoil in the comments.
What makes this sauteed mushrooms and onions so special?
Usually when you sauteed mushrooms the result is kind of underwhelming and soggy. I was so disappointed the first time I attempt to make them. Then I remember Julia Child and her famous phrase “with enough butter, everything is good” and oh boy she was right.
For this recipe, I will ask you to ditch that expensive olive oil and grab a big tablespoon of butter. This is a game changer, my friends. Instead of a watery “sauce”, you will get a rich and buttery herb sauce.
The next thing that makes this recipe so great is the herb mix. I like to use Margão Segredos do Mundo Italia, which is an Italian season that I can get easily here in Portugal. But you can use your favorite Italian season for this recipe.
But what if I don’t have any Italian season that I can use?
Italian season is a mix of herbs and spices so you can create your own “Italian season” with some basic ingredients:
Just mix equal parts of each ingredient:
- Oregano
- Thyme
- Garlic powder
- Onion powder
- Sweet pepper powder
Voilá insta-Italian season.
The rest of this recipe is as simple as it can get. Melt the butter, toss the mushrooms and the sliced onions. Season with Italian season and stir occasionally until the onions are transparent and the mushrooms are slightly brown. Serve and enjoy!

Sauteed mushrooms and onions
Ingredients
- 100 gr mushrooms
- 1 onion cut into slices
- 1 tbsp butter
- ½ tsp sea salt
- 2 tsp Italian season
- Chili flakes (optional)
Instructions
- In a big pan melt the butter.
- Toss the mushrooms and the sliced onion. Add the Italian season, the sea salt and the chili flakes. Stir until the mushrooms are slightly brown and the onion is transparent.
- Serve immediately.
